Carrot Thoran
Stir-fry with carrot and coconut and some garlic, green chilly and curry leaves

Ingredients
Carrot - 2 cup
cut into small cubes
Green chilly - 1
chopped
Garlic - 2 cloves
chopped
Curry leaves - few
Turmeric powder - 1/4 tsp
Mustard seeds - 1 tsp
Split urad dal - 1/2 tsp
Whole dry red chilly - 1
halved
Grated coconut - 1/3 cup
Oil - 1 tsp
Salt - to taste
Instructions
Heat oil and add mustard seeds. When it pops, add urad dal and dry red chilly and fry till dal becomes golden.
Then add garlic and saute for 30 seconds. Then add green chilly, curry leaves and saute for another few seconds.
Then add the carrots, turmeric powder and salt. Mix well. Cover and cook in medium heat till carrots become soft. Do not add any water.
Once the carrots are cooked, fry them in high heat for 2-3 minutes. Then add the coconut and fry for a minute. Remove from heat.
