Spicy Peanut Potatoes | Moongphali Aloo Sabzi


Spicy Peanut Potato Curry

Dry potato curry with peanuts and spices.

Ingredients:
4 medium potatoes, boiled and cubed
2 tbsp oil
1 tsp cumin seeds / jeera
1/4 tsp hing
Few curry leaves
1/2 inch grated ginger or 1 tsp ginger paste
3-4 green chillies, slit lengthwise
1 tsp dry mango powder / Amchur powder
1/4 tsp turmeric powder
1 tbsp thick yogurt
Salt as required
Coriander leaves to garnish
1 tbsp crushed peanuts
To grind:
3 tbsp roasted peanuts
2 tsp coriander seeds
1 tsp cumin / jeera
1/2 tsp ajwain
1/2 tsp fennel seeds
1/2 tsp pepper
2 red chillies
Method:
1. Coarsely grind the ingredients under ‘To grind’.
2. Heat oil in kadai and add jeera. hing and let it sizzle. Add the curry leaves, ginger, chillies and saute for few seconds.
3. Add the potatoes, ground spice mix, turmeric powder, dry mango powder, salt and combine well.
4. Cover and cook for 2-3 minutes. Then add the yogurt, crushed peanuts and combine.
5. Remove from heat and garnish with coriander leaves.
