Grilled Pineapple Salsa
Sweet, tangy and spicy salsa with grilled pineapple, onion, jalapeno, coriander and lime

Ingredients
Pineapple - half
Onion - 1/4 cup
finely chopped
Coriander leaves - 1/4 cup finely chopped
Jalapeno chilly - 1
finely chopped
Lime juice - 1 tbsp
Salt - a pinch
Olive oil - 1/4 tsp
Instructions
Cut the pineapple into 1/4 inch thick slices. Heat a grill pan and drizzle olive oil.
Place the pineapple slices and grill on each side on medium-high heat for 3 to 4 minutes or until tender with light char grilled marks.
Allow the slices to cool. Cut them into medium cubes.
In a bowl, add grilled pineapple cubes, onion, coriander leaves, red chilly and combine. Add lime juice, salt and toss well.
Serve immediately or cover and chill until ready to serve.
Notes
De-seed the jalapeno chillies if you don't want the salsa to be spicy.
You can use normal green or red chillies instead of jalapeno.
