Mediterranean Chickpea Salad

Ingredients

cooked chickpeas

red onion

chopped cucumber

chopped red capsicum

cherry tomatoes

olives
sliced

chopped parsley

tbsp
chopped coriander leaves

cup
crumbled feta cheese
For the dressing

olive oil

tbsp
lemon juice
1
garlic clove
minced
¼
tsp
cayenne pepper / red chilly powder

tsp
pepper powder
or to taste
Salt to taste
Instructions
Mix all the ingredients for the dressing in a small bowl. Set aside.
In a large bowl, add all the ingredients for the salad except feta and mix well.
Add the crumbled feta, dressing and combine well. Chill for 10-15 minutes and serve.
Notes
If you don't have parsley, replace it with coriander leaves.
If you are not having the salad immediately, refrigerate it until ready to serve.
