Preheat the oven to 200 °C | 400 °F. Line a baking tray with parchment paper.
Keep the pastry sheet outside for 30 minutes or thaw them as per the instructions in the packet.
Heat oil in a pan and add onion, green chillies, garlic, ginger and curry leaves. Fry till the onion turns golden brown.
Add tomato sauce, turmeric powder, coriander powder, red chilly powder, pepper powder, garam masala, salt and fry for 1-2 minutes. Remove from heat and allow to cool.
Cut the pastry sheet into 4 square pieces. Spoon the onion mixture on the middle of each pastry square and place a halved egg on it.
Fold all the corners of the pastry to the center on top of the egg and slightly press to seal the top and sides. Gently brush with egg wash.
Place on the baking sheet and bake for 20-25 minutes or until it turns golden brown.
