Beans Thoran

Kerala style green beans and coconut stir-fry

Ingredients

  • 2 cup chopped green beans
  • ¼ tsp turmeric powder
  • Salt to taste

To grind

  • ½ cup grated coconut
  • ¼ tsp cumin seeds / jeera
  • 2-3 green chillies

To temper

  • 2 tsp coconut oil
  • 1 tsp mustard seeds
  • ½ tsp split urad dal
  • 1-2 dry red chillies broken
  • Pinch of asafoetida / hing
  • Few curry leaves

Instructions

  • Grind coconut, cumin seeds, green chillies to a coarse paste adding 1-2 tsp of water.
  • In a kadai, add the green beans, turmeric powder, salt, little water and cover and cook till the beans are soft.
  • Heat oil in a pan and add mustard seeds. When it splutters, add urad dal, red chillies, asafoetida, curry leaves and fry till dal turns golden.
  • Add the coconut paste and saute till the raw smell goes. Then add the cooked beans, salt if needed and fry for 3-4 minutes.

Notes

  • Take care not to overcook the beans. Also covering and cooking the beans helps in reducing the loss of nutrients.
  • You can also add a small piece of ginger while grinding.
