chopped green beans
¼

turmeric powder
Salt
to taste
To grind

cup
grated coconut
¼
tsp
cumin seeds / jeera
2-3
green chillies
To temper

tsp
coconut oil

tsp
mustard seeds
½
tsp
split urad dal
1-2
dry red chillies
broken

of asafoetida / hing
Few curry leaves
Instructions
Grind coconut, cumin seeds, green chillies to a coarse paste adding 1-2 tsp of water.
In a kadai, add the green beans, turmeric powder, salt, little water and cover and cook till the beans are soft.
Heat oil in a pan and add mustard seeds. When it splutters, add urad dal, red chillies, asafoetida, curry leaves and fry till dal turns golden.
Add the coconut paste and saute till the raw smell goes. Then add the cooked beans, salt if needed and fry for 3-4 minutes.
Notes
Take care not to overcook the beans. Also covering and cooking the beans helps in reducing the loss of nutrients.
You can also add a small piece of ginger while grinding.
